Xanthe Clay cooks up runner beans and carrots and serves them up with succulent English ham and a sauce of creme fraiche and mustard - in under five minutes. Carrots cooked in their own juices with butter and herbs, with a slice of good ham, ideally hand cut, but anyway not that strange wafer thin reformed type. What could be nicer, especially with a creamy dollop of mustardy sauce. * 2 thick slices of good ham (or 4 thinner slices) * 3 carrots * 1tbsp butter * a few sprigs of herbs, parsley, tarragon, chives, dill, chervil or a mixture * 1tsp grain mustard * 2tbsp thick cream or crème fraiche Grate the carrot on the coarse side of a box grater. Melt the butter in frying pan and add the carrots, a pinch of salt and a generous grinding of pepper. Stir until hot through and wilting. Chop the herbs and mix in. Quickly mix the mustard and cream (or crème fraiche). Put the ham on plates and pile on the carrots. Dollop the mustard cream alongside. Eat straightaway. Read the recipe here: telegraph.co.uk
