Now of course its delicious to eat just as it is, but you can also cook with it. So what we're going to do is take a piece of Barramundi, or use any type of fish, but what im going to do is wrap up the Barramundi with the prosciutto, you can use a chicken breast or veal. Once you've wrapped it up, you cook it just as you normally would, in a hot non stick pan, just for a few mins on each side for fish and it comes out beautiful and crispy with a nice smokey, salty flavour to it. You don't need to season it because the salt of the prosciutto is enough to season to give it a delicious flavour. There you go, quick simple tip that's going to make your dinner, unbelievable.

Transcript Now you know the old saying you eat with your eyes, well it is true, if it looks good it is also going to help in the appetite appeal of the dish. Now you might have some of these fancy cutter or pastry cutters, but you can also get yourself a tin, cut both ends off - just like I have done with this guy. Just like that, see you make yourself a ring, but if you've got yourself a set of fancy rings yourself, of course use those. Then what you do, is you then take the salad or whatever it is you are going to present and pop it into your ring. So just stack it up just like that, and then you can push it down a little bit like this. And then when you take of the ring, some of the salad is going to fall out, but it is still pretty much going to hold a nice shape. Now if you are going to cut the edges off, be careful because you are going to have very sharp edges. Make sure you are cautious with it when you do it, you lift it up and you get this beautiful presentation, and you pick up the piece of fish that you've grilled or the chicken breast -- let it collapse a little bit but you still keep the beautiful presentation. Then ad a little bit of dressing that you've made, just drizzle it around the outside and look at that. They say that you eat with your eyes...well I'm hungry. You're now a Masterchef so go on, get cooking!

There isn't much to know but the couple of things there is to know are really important. What you need to do is serve the cheese at room temperature. What you might also want to do is get a damp cloth to cover the cheese to lock in the smells. You need to bring it out of the fridge a couple of hours before you serve it so it just slowly comes up to that nice room temperature. Now you can serve any type of cheese you like, the rule is, there are no rules, unless you want a nice variety, depending on who is coming. Some people prefer a soft cheese, some people would prefer something with a bit of age and some people would prefer something a little bit milder, so a semi-firm cheese. Go for whatever cheese you like an then put some other things on your platter like a quince paste, some muscatel grapes, some fresh grapes are great, some figs are really great and of course some crackers. Make sure you've got a variety of stuff and make sure you serve it at room temperature. So there's a million different cheeses to choose from, go into the deli, pick up a few to try before you buy and experiment, you'll love it.

Let me show you how to make the perfect chicken breast that you've pounded out. You grab your chicken breast and put a bit of cling wrap that we double up -- take your chicken breast, lay it on the cling wrap, fold the cling wrap over the chicken. The next thing you do is grab yourself a mallet or a little meat bat, if you haven't got one, don't stress out, you can even use a rolling pin, so you want to just bat it out until you get it nice and thin, the trick is, start in the middle and use a circular motion, so you are just slowly tapping it, don't come on and crunch it or you will bang a big hole through it. Just start off nice and light and then just gradually work it out. Now of course, the thinner you lay it out, the quicker its going to cook. If you want to cook it fast, make it nice and thin, if you want to leave it a little thicker so its nice and juicy that's fine too. So once you've pounded it out, you just take it out, its ready to cook and put it straight on the barbie and you can flavour it with herbs and some salt and pepper or egg wash and breadcrumbs. Now you know how to do it, get busy, because remember -- you're the MasterChef. I'm going to show you how to poach the perfect egg. What you'll need is a pot of water, white wine vinegar, eggs, and some small bowls or cups. Get a pot of boiling water, then you take some white wine vinegar, the acidity from the vinegar is going to help the egg whites, the protein of the egg whites coagulate so its going to grab around the egg yolk so its going to stay nice and tight together. So I put quite a generous amount of the white wine vinegar into the boiling water, 2 or 3 or maybe even 4 tablespoons then crack eggs first into your small bowls or cups because the little bowls are going to allow you to slowly lower the eggs in to the boiling water. If you drop your eggs in from high above its going to make the egg go everywhere. So instead slowly lower them in to the boiling water. So the water should still be at a nice rapid boil and then once you drop them in, they're going to just take a few minutes, but ill show you how to make sure they're cooked. The next thing you need to do is get yourself organised. Grab a couple of toasted muffins or toast, get some baby spinach to sit on the plate, as well as some beautiful salmon. Once your eggs have had a couple of minutes in the water, what you want to do is just use a slotted spoon and carefully lift them out of the water. Push on the outside of the egg which ...

Now when you're working with pastry the important thing is that you don't overwork your dough, if you do, what you do is you exercise the gluten in the flour and that's going to make your dough very elastic so what's going to happen is that when its baked, its going to shrink and possibly crack. The important thing is to make up your dough, wrap it in cling wrap and stick it in the fridge to rest to let the gluten rest before you bake it. Then roll it out, line your tart case or whatever it is that you're making and then let it rest again in the fridge for about half an hour before you stick it in the oven. The pure is a little bit richer so if you want to cook something that's got a really nice olive oil flavour that's the one to go for. Coles and Curtis Stone show you how to dry parsley Transcript Now how would a Masterchef garnish a really simple dish? Let me show you. What you want to do, is get yourself a piece of parsley, just like this, and then dip it into just a little bit of olive oil like that. I've just covered the plate with a little bit of cling wrap, then what you do is just push the parsley so it is pretty flat on the plate. Then repeat the process, so depending on how many garnishes you want, you might want a couple or you might want a whole bunch. You are basically going to dry out the parsley. There are a few ways you can do it. You can leave it in a really low oven, or you can leave it sitting outside -- you can do it on parchment paper in the sun, or you can pop it on the microwave for about a minute and a half. What happens is the parsley comes out beautiful and crispy, nice and dry. So you pick it up and you pop it onto the piece of fish or whatever it is that you are going to garnish and you've garnished your dish just like a Masterchef.
