Greetings! Today I would like to introduce a series that I have been thinking about for a long time. Preppers Pantry, pantry meals, will help all of us use our food storage to its greatest advantage. To give you some background, for about 2 years I have been putting back a supply of food and other items to be used in the event of an emergency, whether it be personal, natural or economic. With the way the world is today, you just never know what could happen tomorrow. Additionally, it is a good idea for all of us to prepare in some way should an emergency strike. I started small, adding a few extra cans or boxes of shelf stable food to my regular pantry. I always store what my family will eat because if we are thrust into a situation where we have to eat beans and rice and I have never cooked beans and rice, no one is going to be happy. When you are placed in a stressful situation, it is best to have things to eat that are familiar and comforting. My few cans extra every grocery trip turned into my husband and I converting a coat closet into an additional larder and then blossomed into him creating a can rotator cabinet, recently we built a loft system for bucket packed items and are now considering more cabinets in our kitchen to maximize our storage potential. All of these things happened over time and with frugal means of implementation. Dont be overwhelmed and dont be scared. Hey guys! This is just a video showing you how to cook one of my favorite, Mexican style breakfasts. It is called Huevos con Jamon, or Eggs with Ham in English. I apologize if you have a hard time hearing me, my camera is like lost or something so I had to use my laptop. Anyway, I hope you guys enjoy the video and give this recipe a try. I'll include what I used here okay So this is what you need: 2 Eggs Two slices of your favorite ham (I used turkey breast) or if you prefer you can use two sausages. One slice of butter Salt Milk Tapatio hot sauce You prepare the eggs like if your going to make scrambled eggs, crack them into a bowl or some kind of container, put in a splash of milk, and a bit of salt and whisk it all together. Cut up your ham into tiny little pieces, or however big you would want them, and toss them into a small pan with about half of that slice of butter. If your using Sausage, cut the sausage down the middle long ways, and then cut each half into small pieces. Toast the ham/sausage a little, and then use the rest of the butter on the side of the pan so that the egg doesn't stick. Once all the butter is applied, add the egg and let it cook. I always use a high flame because it cooks faster, but you can use the recommended medium/low for eggs. This part is optional: Add the Tapatio hot sauce while the eggs are still wet! That way it mixes in with the actual egg instead of resting on top like it would if you added it later! Total it should take about 8 ...
Greetings! Today is Sunday and I needed to make something great, good tasting and hearty that we could enjoy for dinner because I knew that by the end of today I would be hungry after working all day in the garden! So I decided to exhume the hambone from Easter out of the fridge and make this delectable split pea soup full of spring veggies! Here is what you will need to make this recipe: 1 ham bone 2 cups (1 bag) dried split peas 1 Cup Diced Carrots 1 Cup Diced Celery 1 Large Onion Diced 2 Cloves Garlic, Chopped 6 Cups Water 2 Veggie Bullion Cubes 2 Ham Bullion Cubes 1 Teaspoon Dried Thyme 1 Teaspoon Dried Marjoram Place dried peas in colander and rinse and sort out any stones or odd things that may be in there. Rinse again set aside. Place ham bone in crock and add veggies, peas, water, bullion cubes and herbs. Set on high and cook for 1 hour on high and reduce to low setting for remainder of cooking time 6 -7 hours. Remove ham bone and ham with a slotted spoon, careful not to remove too many of the cooked veggies. Try to get as much of the ham and cartilage out as you can. I used my immersion blender to smooth the soup. Remove the ham from the bone and shred all of the usable ham. Add back into the crock pot and serve with your favorite bread or biscuit. A great breakfast treat brought to you by James Hayduk. It's an easy Shrimp & Grits recipe to give you an amazing taste of the south. Shrimp and Grits Ingredients: 1 Box of Instant Grits 8 oz of Half and Half 8 oz Sharp White Cheddar (Any cheese will work) 1 Bell Pepper Diced ½ Medium Onion Diced 3 Cloves of Garlic minced ½ lb Tasso Ham 1 ½ lbs of Medium Size Shrimp Olive Oil Salt Directions: Follow the recipe to make grits as indicated by your box. When the grits begin to thicken add the cheese and Half and Half. Continue to stir the mixture until all the cheese has incorporated. In a separate pan begin to sauté the Tasso Ham over medium heat with 1 tbsp of olive oil. Cook ham until crisp and then add the Onion and bell pepper to the ham. Allow to sauté over medium heat for 2 minutes and then add your garlic. Sauté that mixture for another 2 minutes and add the shrimp and season with salt to taste. Cook the shrimp for 2 to 3 minutes or until the shrimp have turned pink. Top the grits with the shrimp mixture and Enjoy! Enjoy and don't forget to comment.

In this video, Betty demonstrates how to make a traditional Southern dish, New Year's Day Hoppin' John. This is a dish that consists mainly of black-eye peas, rice, onions, and ham. It is to be eaten on New Year's Day, in order to bring a prosperous new year. This is my own version of Hoppin' John, and I have designed it to meet the requirements of the traditional dish, yet taste wonderful! Ingredients: ½ stick butter or margarine, melted ¾ cup chopped onion (2) 10 ½ oz. soup cans beef broth (1) 10 ½ oz. soup can long grain white rice, uncooked (2) 15 oz. cans black-eye peas (2) 5 oz. cans of Hormel smoked chunked ham, cut into cubes (or equivalent) salt and pepper to taste, optional (Salt will probably not be needed, as almost all ingredients are salted.) Place ¾ cup chopped onion in a small saucepan containing ½ stick melted butter. Saute the onions over low heat until clear and caramelized. Meanwhile, empty the 2 cans of beef broth and 1 soup can of white rice into a medium saucepan, and bring to a boil over medium heat. Cover, reduce heat, and cook for 14 to 15 minutes, until almost all beef broth is absorbed by the rice. When the onions are sautéed, and the rice is cooked, you may start assembling your Hoppin John. In a large, deep skillet or Dutch oven, combine sautéed onions, cooked rice, 2 cans black-eye peas, and 2 cans smoked ham. Salt and pepper, if desired. This year we cooked 96 Turkey for our annual Thanksgiving Turkey Pit BBQ. We had a great time and the Turkey turned out perfect. Special thanks to Arnett Backhoe Service for digging our trench. It was 65' long x 5' deep and 2' wide. We had enough room for at least 4 more Turkey so next year we must break 100. Sassy C's came out with the ovens again this year and backed us Cinamon Rolls on site; they also brought dozens and dozens of Dinner Rolls and Pumpkin Pies for the Thanksgiving dinners... they were incredibly delicious as always. Jone's Kettle Corn came out for the first time this year and we are glad they did, absolutely the best Kettle Corn we have ever had; less than 24 hours later and I'm allready Jonesin for more, I guess that's why they call it Jone's Kettle Corn cuz you just can't get enough. If you are planning any type of event I highly recomend both Sassy C's and Jone's Kettle Corn they will make a big hit with your attendees. We are so greatfull to Greer Family Farm for hosting us again this year; they were most accomodating and we really appreciate them for providing the space for the pit and putting up with our ever growing pile of firewood these past 3 months. The firewood came from the Boy Scouts of Troop 82; they have been doing service projects in the neighborhood by cleaning up as many old, dead trees as they could and since most of it was Citrus the coals in the pit were perfect. Ham Egg and Cheese Biscuits: 4 cups flour, 3 tsp baking powder, 1 tsp salt - Sift together. Add 1/2 cup margarine or shortening; cut into flour mixture. Slowly add 1 1/2 cup milk; 1 cup of grated cheese, 1 cup diced ham or bacon. Mix together. Dough will be sticky-you'll need flour to form biscuits. Spray muffin pan with cooking spray. Use a muffin pan and form balls that will cover 1/2 of muffin round. Use a rounded item to push crevices into center of dough. Separately scramble 8 eggs, season with salt, pepper, chili powder, garlic powder, and oregano. Scramble. Spoon egg mixture and fill crevices made in muffins. Cut ham into slices and form criss cross patterns on top, sprinkle with grated cheese. Cook at 450 for 12-14 minutes; or until your fork comes out clean from muffins. Eat as is or make white gravy to accompany the biscuits.

Betty (using her ever-analyzing food talents) created the following recipe as an imitation of the ham served in the cafeteria, and she has continued to make it throughout her 39 (almost 40!) years of marriage. Ingredients: 1 canned ham (I used Hormel brand, 5 pounds. You may use any brand, and reduce it to 3 pounds, if desired.) 1 cup brown sugar, firmly packed 2 tablespoons prepared mustard 1 teaspoon orange juice (You may use another flavor of juice or a juice drink.) Remove the canned ham from the container and place in a crock pot on low for 6 to 8 hours. You may need to cut it into two pieces to get it to fit in the crock pot. When you are ready to put your Brown Sugar Glazed Ham recipe together, remove the ham from the crock pot, and place it on a tray for slicing. Use a kitchen knife, slicer, or electric knife to slice the ham into equal pieces. You may decide to leave some of the ham unglazed for guests who prefer to skip the brown sugar flavor. In a small bowl, mix 1 cup of firmly packed brown sugar with 2 tablespoons of prepared mustard. Use about 1 teaspoon of orange juice to get them to combine. In this video, Betty demonstrates a twist on potato casseroles. Mashed potatoes and blended with cheddar cheese, sour cream, and green onions, and then tender chunk ham is added. After a drizzle of melted butter on top, the casserole is baked to perfection in the oven--just another way to make potatoes not boring! Ingredients: 4 oz. pkg of instant mashed potatoes (I used Idahoan brand--It makes 2 cups.) 2 (generous) cups boiling water 3/4 cup shredded cheddar cheese 1/2 cup sour cream 1/2 cup chopped green onion tops 5 oz. can tender chunk ham (I used Hormel brand. Be sure to cut it into chunks, before adding it in.) cooking oil spray Make the instant mashed potatoes, adding the 2 generous cups of boiling water, according to package instructions. (You may substitute 2 cups of leftover mashed potatoes, if you have them.) Add in 3/4 cup shredded Cheddar cheese, 1/2 cup sour cream, 1/2 cup chopped green onion tops, and 5 oz. of tender chunk ham, cut into chunks. Add in any ham broth that may be in the can. Mix thoroughly, and then pour into a medium oven-proof baking dish that has been sprayed with cooking oil. Bake at 375 degrees for 25 minutes. Serve while hot. It's a combination of great ingredients, and it will never taste like leftovers. Plus, you can make it from canned tender-chunk ham, if you don't have leftover ham! Ingredients: 6 oz. uncooked pasta (I used medium -sized shells.) 1/2 pot boiling water 1 tablespoon salt 2 tablespoons butter or margarine 1/4 cup flour 1 1/2 cups milk 1 1/2 cups shredded Cheddar cheese dash of salt (for the cheese sauce) (2) 5 oz. can tender-chunk ham (I used Hormel.) 1/2 cup chopped green pepper 1/2 cup milk--added after all other ingredients cooking oil spray Place 6 oz. uncooked pasta into rapidly boiling water in a medium to large pot. Add 1 tablespoon salt. Stir and then let cook for about 8 minutes, until al dente (cooked, but still chewy, not mushy). While cooking your pasta, prepare your cheese sauce. Melt 2 tablespoons butter or margarine in a saucepan. Remove from heat and add 1/4 cup flour. Stir the flour and butter or margarine until blended. Now, add 1 1/2 cups milk and 1 1/2 cups shredded Cheddar cheese. Return this mixture to the stove, add a dash of salt, and cook, stirring constantly, until mixture is thickened and smooth. In this video, Betty shares her favorite pickup food for parties--Deviled Ham-Cream Cheese Finger Sandwiches. These are easy to make, and are absolutely the tastiest! Ingredients: Several slices of dark rye bread 4.25 oz. can of Underwood Deviled Ham 8 oz. carton Philadelphia cream cheese with onions and chives Let the deviled ham and the cream cheese set on the counter to get them to room temperature. (This is not necessary, but it makes them easier to spread on the bread--I even freeze the bread sometimes.) Take two slices of the rye bread and spread the inside of one with a generous portion of deviled ham and the other with a nice amount of cream cheese with chives and onions. Place the two slices together with the deviled ham meeting the cream cheese filling. This will form a sandwich. For a nice presentation at a party or wedding reception, take a knife and trim the crusts from the four sides of the sandwich. (I use an electric knife to do this, because it's quick and easy.) Use a knife the cut the sandwich in half from top to bottom. Repeat this with each half in order to have four "fingers." Arrange them on a serving plate, and continue this process to make as many as you need. They taste so good that you may need more that you expect!

Recipe: How to make ham and broccoli quiche 1. Heat oven to 375°F, and roll out refrigerated pie crust. Allow to soften for 15 minutes for pliability. 2. Fit pie crust into 9-inch glass pie pan. Fold under the pie edge that is hanging over the plate. 3. Crimp the edges: two fingers on the inside, one on the outside, and push on the edge of the pie plate with the outside finger. 4. Make the filling: Layer ham, cheese and thawed broccoli in pie crust-lined pan. In medium bowl, beat all remaining ingredients until well blended. Pour over broccoli. 5.
