Served with an Italian salad and crusty bread, this is one of the most delicious and versatile risotto recipes you'll find. To make it a pumpkin risotto, simply add 1 cup of diced butternut squash or pumpkin meat along with the mushrooms. Many ingredients can also be added about 20 minutes into cooking. For an asparagus risotto, add crisp-cooked asparagus tips; for a seafood risotto, add some of Hill's sauteed garlic shrimp and about 1 tablespoon of tomato paste to the mix. Finally, a chicken risotto recipe can be made by adding diced cooked rotisserie chicken pieces at the end. Flavored with soy sauce, the lean sirloin slices are sauteed with fresh asparagus and served over beef-flavored rice for an easy, quick, and healthy meal! Ingredients: 2 teaspoons cornstarch 1 tablespoon soy sauce 1 pound uncooked boneless sirloin steak, thinly sliced (Slice diagonally across the grain for tenderness.) minute rice, as desired (Use an equal measure of minute rice to the amount of beef broth used.) beef broth, as desired (Use an equal measure of beef broth to the amount of minute rice used.) 1 pound fresh asparagus, washed, trimmed, and cut diagonally into 1-inch pieces 1 1/2 tablespoons extra virgin olive oil 3 tablespoons beef broth 1 teaspoon cornstarch 2 tablespoons soy sauce In a small bowl, combine 2 teaspoons cornstarch and 1 tablespoon of soy sauce and pour over the sliced, uncooked sirloin steak. Use a spoon (or your hands) to make sure this mixture is making contact with all outer surfaces of the steak. Let the steak marinate for about 10 minutes in this mixture. Now, prepare your rice for serving with this dish. You may use regular rice--just follow the package instructions, but substitute beef broth in place of the water for richer flavor. Make as much rice as you like to go with this meal. I used approximately 1 soup can of beef broth and 1 soup can of minute rice. (You may want to double this amount.) This dish is unique to the Iraqi city of Mosul, hence the name Kubba't Mosul. Kubba is done differently in other parts of Iraq, in Baghdad they resemble dumplings which can either be fried in oil or cooked in a stew. Kubba is how "Kibbe" is pronounced in Iraqi dialect. In Mosul, kibbe is made with bulgur, because of the wheat fields that surround the city. Maslawi's pride themselves on making the large flat versions of kubba. This dish is perfect for spring with asparagus, chicken, and pinenuts. Recipe: 2 T grated onion 1 ½ cups bulgur 3 cups water ½ teaspoon salt ¼ teaspoon ground coriander 1 handful asparagus, trimmed ½ lemon ½ lb ground chicken thigh meat 3 T Parmesan cheese ¼ cup pine nuts Preheat the oven to 425°F. Set a pot of water to a rolling boil, and season it well. Slice the asparagus into small little circles, so that they are not overwhelming in comparison to the meat or the bulgur. Pour them into the boiling water for about 30 seconds, then drain. Heat up about 2 T of olive oil in a pot, and gently fry the grated onion until it is translucent. Tip in the bulgur, stir, and pour over the water. Season with salt and bring the water to a boil. Once the water comes to a boil, reduce it to a simmer, and cook covered until the water is absorbed. Cool the bulgur once it is cooked. Mix in the Parmesan cheese, and check the seasoning. Toss the meat with the blanched asparagus, pine nuts, juice from the lemon, and season it well. Line the bottom of a cake pan with olive oil. Plant a layer of bulgur on the bottom, allowing some of them to stick together. Pat it down nicely. Next, add the layer of meat, and distribute everything evenly. Layer the rest of the bulgur on top of the meat. Brush with olive oil and sprinkle some water on top. Bake the kubba covered with aluminum foil for 10 minutes. Remove the foil and reduce the oven temperature to 375˚F. Finish baking the kubba uncovered for about 30 minutes, until the top is browned nicely. Enjoy! ASPARAGUS AND FOUR CHEESE QUICHE 1 tablespoon butter 4 large eggs 1/2 cup ricotta 1/2 teaspoon salt 1/4 teaspoon pepper 1 cup asparagus chopped 1 1/2 cups grated four cheese blend or cheese of your choice Preheat oven to 350 degrees and spray a 9 inch pie plate with nonstick cooking spray. Melt the butter in a frying pan and saute' the asparagus until tender. Set aside to cool. Beat eggs, ricotta, salt, and pepper in large bowl. Fold in cheese and cooled vegetables. Pour filling into prepared pan and bake until knife inserted near center comes out clean, about 40-45 minutes. Cool slightly before cutting.

Sauté asparagus until tender (about 5 to 6 minutes). Transfer asparagus to plate with slotted spoon and return skillet to stove. Pat scallops dry and sprinkle with pepper and 1/2 teaspoon salt. Add remaining olive oil to skillet. Sauté scallops until browned on both sides and cooked through, about 4 to 6 minutes, and transfer to a clean plate. Return skillet to stove and add the garlic. Sauté the garlic for 30 seconds and add the Nobilo Sauvignon Blanc, bring to a boil. Deglaze by scraping up any browned bits from the bottom of the skillet, boiling until liquid is reduced to about 2 tablespoons. Reduce heat to low and whisk in butter one tablespoon at a time until incorporated. Repeat with mascarpone cheese. Once fully incorporated, add tarragon, asparagus and remaining salt and cook until heated. Plate scallops and top with sauce. Garnish with lemon zest before serving. Enjoy with a glass of the Nobilo Sauvignon Blanc wine.
