Makin' Jam. This is the first batch which is cherry plum jam. We will be making plain plum jam too. Also going to make jalepeno jelly. Yummy.
Oh the smell of these berries is something else. YUM. You cook your fruit with the pectin then add the sugar and boil for 1 minute. Watch the pot because that sugar will just climb the walls of your pot. Have a tall one. Trust me. Have your jars and water pot for processing ready to roll, because it all happens lickety-split now. Cook, ladle, seal and process. It is fast and furious for a few but the rewards are incredible.
Making a no sugar or less sugar recipe is basically the same. You do add some water, much more fruit and then add your sweetener after the fruit has cooked according to the directions. I don't use Splenda..artificial sweeteners are horrible for you. I am diabetic, so I use stevia. It is an all natural alternative and cooks well. I only had enough to do half the recipe so I added some sugar to this one today, but it should be great. You can't go wrong when your fruit is ripe and sweet.
Making jam is really pretty easy. I taught myself how to do it with good success a few years ago. This year I am doing blueberry jam. I am going to show you the full sugar jam, but the sugar free is not any harder to do. Just make sure you measure your fruit and sugar exactly, as the chemical reactions of setting can be altered greatly if you add too much or not enough of any of your ingredients. Have fun, give it a try!

Don't waste that watermelon rind! This recipe has been in the family for 150 years and makes wonderful preserves . Serve it on toast, waffles, bagels, or pancakes. Recipe: Trim green peel and red flesh from watermelon. Cut rind into small cubes. Place cube rind in pan and add one part sugar to two parts rind. Let sit until sugar dissolves. Add thinly sliced lemon and cinnamon sticks. Cook on low heat until rind is translucent. Seal in prepared jars.
