J'ai eu un peu de difficulté à définir en français ce plat vietnamien qui vient clôturer cet été la série au chapeau conique des "cha ca", "bo bun" et autres... En fait, l'intérieur des carapaces des crustacés est recueilli et passé au pilon puis filtré, ce qui donne une mousse de corail bouillie ( ce qui représente le rieu, le bun étant le vermicelle de riz... ) avec un goût inimitable car il existe dans les magasins aux yeux bridés, des pots de concentré de bouillon " bun rieu" prêts à l'emploi... Voilà une occasion de se servir des langoustines et de confectionner deux plats : on garde les queues qui seront cuites dans un court-bouillon et servies à part pour un autre repas tandis que les pinces et les têtes serviront à cette soupe. L'aspect économique n'étant pas à négliger de surcroit, les prix pour ce crustacé en été deviennent abordables...
