This is a video diary of a week when I set out to find out once and for all whether cheese can affect your sleep and give you dreams. Each night I ate 20g of cheese, a different one each night, and recorded my thoughts, feelings, dreams and observations. I started the week with mild cheese and ended with strong cheese. For my full article, which includes the science, descriptions of the dreams I had and some interesting cheese facts, go to www.crichton-smith.blogspot.com. I hope you enjoy...maybe with some grapes, dessert wine and some crackers...

Rainey Kelly Campbell Roalfe/Y&R is launching its first TV campaign Leerdammer (Fromageries Bel) to help raise the profile of the cheese among UK consumers. The ad features an elf dancing through a forest playing a flute and interacting with woodland creatures. Despite initial appearances, the elf turns out not to be as nice as expected, when he encounters an old man carrying a basket of Leerdammer. In order to pinch the man's cheesy goods, he turns him into a tree. The spot ends with the strapline: 'Not as mild as you might think.'

A cool rap about a big cheese corporation. Hope you like it! Lyrics:My names mozzarella, they call me big cheese, Im a corporate whiz, so I do as I please, Think your cheese is big? , then prove that its better, Cause the ladies like a man who flashes big cheddar, The cheese industrys, where the business is at, We like to use skim milk, to cut back on fat, Weve gotten complaints that our products are smelly, Then why are they such a big hit at the deli? Our milk is fresh squeezed, from a pasteurized cow, We add as much water as guidelines allow, Its processed, and packaged and shipped off to order, Our profits rose 50% the last quarter, My first name is pepper, my last name is jack, Im mild with a spicy kick that bites back, Its a fact that you cant resist our fresh dairy, We have every flavor from chestnut to cherry, When you get your first taste youll experience bliss, Our cheese is like our bank account, theyre both Swiss, The FDAs inspecting us, our lawyers are protecting us, And other manufacturers are awed into respecting us, With power like ours, who dares to say no? Cause me and Big Cheese are making big dough.
I love Raclette! This meal is traditionally eaten in fall and winter, not so much in the warmer times of the year. The raclette stove can also be used as a table grill, the top surface can be used to grill meats. This is a perfect dinner party meal as it's easy to prepare, and fun for everyone to make, and so yummy! Raclette cheese can be found in any grocery or cheese store in Switzerland; if you live in North America, try a European specialty cheese store. You calculate between 200 - 250 grams of cheese per person, sliced. The raclette cheese is very flavourful and melts quickly, but it's NOT processed single slice cheese! It is real Swiss cheese, made by traditional method. What I like to eat with raclette as side dishes: mini gherkins, pickled zucchini and pumpkin, pickled baby onions, tomato salad in a balsamic dressing with chives, mini corns on the cob, bacon, pear, pineapple, and of course potatoes are a must! Typical spices used on top of raclette cheese are sweet paprika, lemon pepper, and mild curry. In stores here you can buy a special "raclette spice" mix, and I also like caraway seeds and cayenne pepper on my cheese! To drink, I personally like white wine, but some people prefer to have their raclette and fondue with tea. Raclette is also eaten in some places in France, and maybe other cheese-loving countries in Europe. :P
CHY-MAX® M is a cheese coagulant that offers: • Lower cost-per-ton of cheese: CHY-MAX® M is more efficient as a coagulant, allowing for both a lower dosage (less International Milk Clotting Units, IMCU per ton of cheese) and a higher cheese yield (2-10 additional kg per ton of cheese). • Better taste: mild and rounded flavors and less bitterness. • Prolonged shelf life of some cheeses due to extremely low proteolytic activity. • Better process control due to higher robustness to pH and temperature variations bringing more consistency in production. • High whey value due to high specificity of the chymosin CHY-MAX® M produces the purest whey for processing into valuable whey protein concentrates or isolates. • CHY-MAX® M is Kosher, Halal and suitable for vegetarians. CHY-MAX® M is suitable for all cheese types, and has already proven its excellent performance in continental, pasta filata and cheddar cheese types.
