Thanks to my special guest Amy from whatjewwannaeat.com Subscribe on YouTube (Never miss a video!) http Get full instructions on how to make gefilte fish at: hilahcooking.com Over 100 video recipes at hilahcooking.com INGREDIENTS For the stock 1 quart fish stock (homemade or store bought) 1 clove garlic, crushed 1 celery heart, sliced 1/2 a lemon Salt and pepper For the gefilte fish: 3/4 pound boned salmon 3/4 pound boned whitefish (turbot, cod, pike, etc.) 1 tablespoon vegetable oil 1 medium onion, fine diced 2 large eggs 1/2 cup matzo meal 1/2 cup chopped parsley 1/2 teaspoon ground black pepper 1 teaspoon salt Horseradish sauce: 1/2 cup sour cream 1/3 cup horseradish 3 tablespoons chopped fresh dill Salt to taste Instructions For the stock: Pour into a large soup pot and add 2 cups of water. Add the garlic, celery, and salt and pepper. If you are skinning your fish yourself, add the fish skin, too. Squeeze the lemon into the broth and then drop the rind in, too. Bring to a boil, then simmer while you prepare the fish balls. In a small pan, heat the olive oil over medium heat and saute the onion until soft, or about 5 minutes. Let cool. Chop the fish into fine pieces and place in a bowl. Add the cooled onions, eggs, matzo meal, parsley, salt, and pepper and combine. The mixture should be firm enough to be able to form into balls. Give it a shot. ----------------------------------- Easy Matzo Ball Soup Serves 4 For the matzos: 4 eggs, beaten ยฝ cup seltzer 1/3 cup vegetable oil 1 tbsp dill, chopped 1 tsp salt ยฝ tsp black pepper 1 cup matzo meal For the soup: 8 cups store-bought chicken broth 2 boneless, skinless chicken breasts, chopped 3 carrots, chopped 3 celery stalks, chopped 1 tbsp fresh parsley leaves, chopped Sea salt, to taste Black pepper, to taste To make the matzos, start by stirring together the eggs, seltzer, oil, dill, salt and pepper. Add in the matzo meal until a wet dough forms. Cover with plastic wrap and allow to chill in the refrigerator for 30 minutes. Bring a large pot of salted water to a boil to cook the matzos. In the meantime, to make the soup, add all the ingredients except the parsley to a large pot and bring to a simmer. Cook until the chicken is done and the vegetables are tender, approximately 20 minutes. This chocolate matzo recipe makes a quick and easy dessert for Passover or anytime. A sprinkle of sea salt gives this chocolate covered matzo recipe a gourmet flavor the whole family will enjoy. For this recipe, you will need: 3-4 boards of matzoh 3/4 cup butter 3/4 cup brown sugar 1-1/2 cups chocolate chips (semisweet, dark or milk are all fine) sea salt, to taste 1/2 cup chopped almonds Preheat the oven to 350 degrees. Start by lining a baking sheet with foil. Top it with a sheet of parchment paper or waxed paper. This will help keep the chocolate matzo from sticking. Now place as many pieces of matzoh on the sheet as you can fit. It's fine to break them into pieces to make them fit easier. Next, add the butter to a saucepan over medium heat. Add the brown sugar. Stir and bring the mixture come to a boil. Let it boil for 3-4 minutes, then remove the caramel sauce from the heat and pour over the matzoh. Smooth it over with a spatula, you want to get every piece covered. Now place it in the oven, and bake for 12-15 minutes, until the caramel is golden brown, like this. As soon as the matzo comes out of the oven, sprinkle on the chocolate chips, and return the matzo to the oven to bake for another 2 minutes. Remove the matzo from the oven, and immediately use the back of a flat spatula to spread the softened chocolate chips into a smooth layer of melted chocolate. Sprinkle on a little sea salt, and top with some chopped nuts (that's optional, of course). Now let the ...
