night journey to pahala....................Bengalis have been, and will be I'm sure, the butt of numerous jokes with Rosgulla as the weapon of choice. Not fair! Very few people know that Rasgulla was created in the temple town of Puri in the eastern state of Orissa, where made at Pahala near Bhubaneswar is also equally famous.
My video is in two parts. It is very difficult to make round soft spongy white Bengali Rasgullas at home.I have tried to explain all imp steps in my video.Pl follow these steps carefully and U will enjoy the experience. I had accepted the challenge given by my bengali patient and a friend Sanchayika sarkar 6 mo before. After a lot of hard work, trials and patience I got the success continuously and consistently.Today on 1st Jan 2009 I am sharing my video with u all.Thank You INGREDIENTS: Fresh cow milk 500 ml Whey 100 to 200 ml---125ml app Sugar 5 cups Water 2 cups Milk 1/4 cup to remove impurities Water 1/4 cup to add when scum is formed Corn flour 1 ÂŊ tsp dissolved in 3 tbs water Or (Aritha 2 no crushed and kept in boiled water) Rose water 1 tsp Warm Water 2 cups to sprinkle on syrup Procedure: 1. Boil the milk. Keep aside for 5 to 7 minutes till its temp. drops to 70 cg. 2. Take 5 cups of sugar in 2 cups of water. Put the container on low flame. Stir sugar solution continuously till sugar is dissolved completely. 3. Raise the flame. Add 1/4 cup of milk in it. Milk will bring impurities to surface. Add 1/4 cup of water. Slow down the flame so that layer of impurities is not disturbed. After 5 to 10 min, remove impurities carefully. Sieve the syrup and keep aside. 4. Curdle the milk by pouring whey water in it slowly while continuously stirring it.U will see separation of white curd and green transparent liquid. 5. Keep it for 5 min.Strain it through thin cotton cloth ...

It is believed that the famous Rasagola and other similar sweets which are commonly referred to as Bengali sweets actually originated in the kitchen of Lord Jagannath temple at Puri and later were introduced in Bengal by the cooks of Odisha who were employed by rich Bengalis. Kheer or Payasam which is one of the most common desserts enjoyed all over India is originally from Odisha where it is called Kheeri. Incidentally the kitchen of Puri Jagannath temple is one of the biggest in the world where hundreds of skilled cooks work to produce fifty six varieties of offering for the deity every day and this is fed to over 10000 devotees. According to centuries older convention, the Hindu divinity of Jagganath in Puri is presented with Rasagola at the conclusion of his emblematic journey, during the Rath Yatra every year. The Rasagola at Pahala comes in five sizes. The biggest one is as big as an apple. These are not the standard, rubbery Rasagola of Haldirams, KC Das, Sen Mahasey and Gongurams in neighboring Kolkatta. These are a softer version, more creamish in color than white, and not as spongy as the Bengali Rasagola for sure. The Pahala sweet-makers allege that one of the reasons why the Bengali Rasogola is tougher than theirs, is that the Bengalis want a longer shelf-life for their product. Rusogollas are essentially bengali sweets and are made from paneer.. ( I have already posted the paneer making in my channel ) This is how you make rusogollas.. first off knead the paneer into a fine dough .. ( it will be owdery at first, but as you go kneading it , it will show some cohesion and form a dough ). Make small balls from out of the dough and insert into the center of each of them, a small peice of sugar cube.. This will make the paneer juicy and porous when cooked.. Next make a sugar syrup with 200 to 400 gms or more of sugar ( depending upon your need for how sweet it should be ) in one litre of water.. mildly heating the water if necessary to expedite the process of dissolution ..Add the paneer balls into the surface and place the vessel in a pressure cooker and cook for about 5 minutes with the weight valve in place .. After removing from the cooker, remove the rusogollas into a separate vessel and use the syrup for the remaining rusogollas. Place all the rosogollas in a vessel and refrigerate.. Serve cold.. EAT ! Dont worry if the rusogollas do not become entirely spherical. The sugar cubes are inserted so that when the paneer is cooked, the sugar dissolves and leaves a cavity containing sugar syrup within the rosogollas...
