While traveling across the country and eating at multiple fried chicken places, financial analysts Doug Funke and Jae Lee realized they were sick of working the daily grind and dealing with numbers all day. With their love of chicken, they decided to create an untraditional Korean restaurant with a fusion of Mexican and American cuisine. Their brainchild became Crisp, a contemporary fast-food restaurant with a traditional twist on Korean chicken and other dishes, located at 2940 N. Broadway. Funke and Lee, busy working with other businesses, recruited a customer, Jon Pazona, to become the engine of the restaurant. "I was a customer here, ate a bunch of wings one day and came back the next day, and then one week later, they offered me a job, said Pazona, owner of Crisp. I've been with them ever since. Pazona, whose Italian family owned several different restaurants across New York and New Jersey, had been in the restaurant business since he was 15. He said he tries to run the business as a fast-food joint and not like a traditional sit down place like many other Korean food establishments. "For the restaurant, we were trying to do everything you would never find in a Korean restaurant, which is bright walls, loud music, bright lights and non-Korean employees," said Pazona. This is a cool little Chicago deep dish pizza place that just opened next to Longview Community College. The neat thing about this place is that they used Face Book for their initial advertising. We went there on their 3rd day of soft opening. We were fortunate enough to get a pizza (they ran out shortly after we got there). They officially open on 2/8/10. I recommend giving it a try. November 20, 2009 - Chicago - A large group of Latino state legislators, aldermen, committeemen and county commissioners Friday announced their endorsement of Governor Pat Quinn, citing his lifelong commitment to job creation, education, and honest government. Sauerkrautrecipes.com presents Sauerkraut Dragon Roll by Jin Woo Han, executive sushi chef, Blu Coral Chicago 1 sushi mat 1 piece sushi nori (seaweed) wrapper 2 cups Frank's Sauerkraut - rinsed and drained. 1 cup cooked sushi rice (prepare in advance; add rice vinegar to the cooled, cooked rice before using) Pan seared scallops: Sear gently in advance. Four strips of Unagi (fresh water eel). Cucumber - thin strips. Eel sauce. Torch to braise. The trick to sushi is wrapping your sushi mat with plastic wrap before starting. Place the nori on the mat. Distribute a layer of rice across the nori. FLIP OVER. Place scallops and cucumber in adjacent rows, add a layer of sauerkraut. Roll. Add Unagi to cover. Braise with torch. Cover with plastic, reroll and cut into seven pieces. Plate. Garnish with eel sauce.
