Raspberry Chipotle Baby Back Ribs Prep Time for Marinating: at least 1 hour or overnight Cook Time: 3 hours Serves 2 (6 to 7 ribs per person) 1full rack Pork Loin Baby Back Ribs 3 Tablespoons Adams Reserve Rib, Roast, and Steak Rub, divided use* 1 cup Roberts Reserve Raspberry Chipotle Sauce* 1 can of light beer 1. Cut rib rack in half for 2 portions; place them in a large zip-lock bag with beer and 2-tablespoons Adams rub. Marinate in refrigerator, at least 1 hour or overnight, if time permits. 2. Preheat oven to 225ºF. Transfer ribs from bag to a foil wrapped baking sheet, bone sides down (discard bag with marinade). Season ribs with remaining 1-tablespoon of Adams rub. 3. Bake for 2 hours; then remove from foil and transfer ribs to a heated grill. Grill 50 to 60 minutes over Medium heat, turning and basting with Roberts Reserve sauce every 10 minutes or so. 4. Sweet peppers, onions, zucchini, squash and fresh corn made for the perfect meal to our Ribeye steaks. We like our meats on the well done, so you won't see any pink them, but wow, the Weber Genesis grill did an amazing job cooking everything in about 20 minutes. Next time we're going to cook the steaks on the med-well done side to enjoy more of meat juices. Still, it's the 1st time we're using our grill and we are so in love with it. Next we're going to grill some Halibut fish and see how that turns out. If you are in the market for a grill, just get a Weber. This time I use he Cuisinart Rotisserie to roast a 3.99 a pound 4 1/2 lb bone in ribeye roast. It turns the roast in to some tasty mouth watering prime rib. Just tie the roast, cook to 135 probing often not to over cook. After it hits 135 let it rest for 15 min and serve. For added flavor coat in olive oil and a nice beef rub for four our more hours prior to roasting.
