In this video, Betty demonstrates how to make a Homemade Apple Pie with a lattice crust. The filling is made of Granny Smith apples, sugar, flour, nutmeg, and cinnamon. Baked for about 40 to 50 minutes, it is bubbly and aromatic! I have used this recipe for almost 40 years, always with great results, and I hope you like it! Ingredients: pastry for 9-inch two-crust pie ¾ cup sugar ¼ cup self-rising flour (If you are using plain, all-purpose flour, add a dash of salt to the recipe.) ½ teaspoon ground nutmeg ½ teaspoon ground cinnamon 6 cups thinly sliced peeled, tart, firm apples (I used Granny Smith apples.) 2 tablespoons butter, cut into small cubes and refrigerated until needed Prepare two circles of unbaked pastry, each large enough for a 9-inch pie. (If you need help, search for Betty's Homemade Pie Crust Recipe.) Place one of the pastry circles into a 9 to 9 ½-inch pie plate. (You may use a deep-dish or regular pie plate.) Pat the pastry circle until it fits the pie dish well and is even, with edges that come to the top of the dish. Set this prepared crust and the other pastry circle aside. In a large mixing bowl, mix together ¾ cup sugar, ¼ cup flour, ½ teaspoon nutmeg, and ½ teaspoon cinnamon. Add 6 cups thinly sliced peeled, tart, firm apples. Olympian Daron Rahlves made a repeat performance as the fastest male skier down the mountain at this weekend's 2010 Silver Belt Banzai, while sister Shannon again took first place in the women's ski division. The two siblings took the top podium spot amongst a field of over 80 local and regional qualifying finalists racing for a $5000 total prize purse in Youth (age 14 - 19), ski and snowboard, men's and women's divisions. All entering athletes were timed in single-skier trials on Saturday, with qualifying times setting the heats for Sunday's skicross-meets-downhill namesake "banzai" format, where six skiers/riders race at once down the famed Silver Belt gully with minimal rules but to stay on course and finish in the top three to advance. Rahlves, who most recently competed in ski-cross for the United States in the 2010 Vancouver Olympic Games, is a decorated downhiller, an X-Games competitor and former World Champion. You may use fresh shredded cabbage (or pre-packaged), add some mayonnaise, crushed pineapple, and marshmallows, and you have a delicious coleslaw worthy of serving to company! Ingredients: 4 cups shredded cabbage (I used pre-packaged shredded cabbage that had shredded carrots. You may use a fresh head of cabbage and chop or shred it, if you prefer.) ½ cup mayonnaise ½ teaspoon salt ½ cup miniature marshmallows (You may use large marshmallows and cut them into quarters.) 8 oz. can crushed pineapple, drained 1 tablespoon pineapple juice pineapple chunks for garnish (optional) In a large bowl, combine 4 cups shredded cabbage, ½ cup mayonnaise, ½ teaspoon salt, ½ cup miniature marshmallows, 8 oz. drained crushed pineapple, and 1 tablespoon pineapple juice. Mix thoroughly, and then spoon into a nice serving bowl. Place a few pineapple chunks on the top for garnish, if desired. Cover with plastic wrap, and refrigerate until ready to serve. The mixture may seem dry, but it will become creamier as it chills. I made this coleslaw the first time I had my in-laws over to dinner after I was just married (in 1970), and I've been making it for the past 40 years.
