On Monday, the first Annual Matzah Bowl was held at Forest Trace in Lauderhill which featured caterers being judged by both a panel of judges and members of the community for the taste, texture and other factors in making a good matzah ball. ``This one is nice and fluffy,'' Evelyn Goldstein observed at table No. 1. ``This one is a bit salty,'' her friend Blanche Broder weighed in at table No. 6. ``The differences are very slight,'' Goldstein observed after table No. 3. ``The seasoning makes the difference.'' The main ingredients are deceptively simple: matzah meal, eggs and salt. But at Monday's Golden Matzah Bowl, put on by the Forest Trace retirement home in Lauderhill, there were plenty of permutations: pesto, parsley and plenty of pepper. The event came two weeks before the start of Passover, a weeklong commemoration of the deliverance of the ancient Hebrews from slavery in Egypt. It is said that the Hebrews left so fast that they didn't wait for their bread to rise. So during the holiday, Jews don't eat leavened bread. The quest for the perfect matzah ball has vexed cooks, caterers and Jewish grandmothers for thousands of years. First-timers typically end up with thick, mushy rocks. I was unable to obtain non-pasteurised milk in my place, and there doesn't seem to be a reasonable place from which I can buy Calcium Chloride (an easy source of Calcium ions) to strengthen the curds I am getting. Best curds I got were from a low-fat, Calcium-enforced brand of store-bought fresh milk. I was only once able to obtain a lump of curds that stretches which happened to be from this brand of milk. In that time (in which I succeeded in obtaining a stretching curd) I used the same amount (one teaspoon) of citric acid plus a teaspoon of cultural starter, which resulted in a lump that would stretch very nicely, however, having left the lump until the second day (thinking that it would stretch better) I ended up with a lump more acidic than needed, meaning that it would never harden at room temperature and would not expel whey when kneaded as supposed, resulting in a cheese that resembles boiled egg whites in appearance and texture which my family thought was not very appealing. The cultural starter I used last time was nothing more than tablespoon of locally manufactured sour cream left in no-fat milk for a day or so until the milk had the same consistency as yoghurt, indicating assumedly that the live bacterial culture provided by the sour cream has populated in the no-fat milk sufficiently as to provide an excellent source of such bacteria to be used for making cheese. Homemade Veggie Burger With Tahini Mayonnaise This recipe is delicious and will become an economical, healthy staple in your home! The basic recipe follows but your favorite flavors and ingredients can be added for variation or to make it your own families favorite. I like green pepper, Watkins Meat Magic, mushrooms, barbecue sauce, basting a meatloaf formation of the mixture with olive oil in the last few minutes of baking. Egg substitute works very well making this fat free. The oil in the recipe is for frying patties and the basting I mentioned can be eliminated. ingredients 1/2 cup medium-grind bulgur 1 can (14.5 ounces) pinto beans, rinsed and drained 1/4 cup plain dried breadcrumbs 4 scallions, thinly sliced (I like substituting chopped onion) 1 large egg (or egg substitute) 1 large carrot, coarsely grated 1/4 teaspoon cayenne pepper 2 tablespoons tahini (sesame-seed paste) 3 tablespoons vegetable oil (try healthy and flavorful grape seed oil) 4 whole-wheat English muffins, toasted Tahini Mayonnaise Lettuce In a medium bowl, mix bulgur with 1/4 teaspoon coarse salt and 1 cup boiling water. Cover bowl, and let sit until bulgur is tender (but still slightly chewy), about 30 minutes. Drain in a fine-mesh sieve, pressing to remove liquid. Whats up peeps? Ginger and Scallion lobster is a real popular cantonese dish. If you ever go out to a Chinese restaurant, make sure you order it. Unfortunately I did not have any Ginger on hand, BUT i did have a lot of Garlic lol,.. Therefore I will be showing ya how to do a Garlic and Scallion Lobster Dish. If you have Ginger on hand, Add the ginger because it makes a huge difference in the taste. If cooking with the ginger, just stir fry it right before you add in the Shallots. This is actually my first time making this dish, its really not that hard. The hardest part was killing and cutting up the lobster. That part was just brutal and time consuming. Anyhow ENJOY!
